What's New

January 31, 2018

We are now officially a microbrewery! On Sunday, we drove out to Hamilton, New York  to pick up the 7-barrel brewing system we purchased from Good Nature Brewing. It was set up today in our new premises on Laraway Road.

We completed our final concrete pour last Monday in our new premises on Laraway Road, and all of the interior walls are up. The concrete coating firm is working in the brewery this week. When the floors are done, we can build the bar and get the brewing equipment delivered. Still much to do, but it’s coming together!

November 30, 2017

Lots of activity this month. Hickory Creek Brewing finally received a building permit from the Village of New Lenox to start the build-out for the brewery in our new premises. We also received approval of our building plan from the Will County Health Department and permission from the State of Illinois to proceed with our plumbing plan.

We've got the floors cut out and the trenches dug, and are ready for the plumber to lay the drain lines.

On the brewing front, our Christmas beer, Marley's Ghost, is fermenting away. . . . . . . . . . .

Exciting news! We signed a lease on August 2 for 5,000 square feet of space at 1005 W. Laraway Road, in the Country Creek Commons shopping center on the northwest corner of Laraway and Nelson roads. We’ve hired an architect and are working on getting our local and state licenses.

Many thanks to all of the friends who attended our fundraiser for the MS Society last Saturday. Together we raised $575 for the cause. 2017 will mark the 20th year of our participation in the Bike MS fundraiser. As we continue our search for a suitable location for the brewery, we will host more of these events to raise money for our favorite charities. Cheers!

March 22, 2017

Great News!  On March 6 we received approval from the federal government for our brewing permit.  We’re now working through issues for our state and county permits.

On the brewing front: a friend of the brewery is intolerant to gluten.  We want to make a beer for folks like him, but we want it to be flavorful and well, "craft" beer.  I’ve been reading up lately on ways to brew with normal grains and hops and still produce a gluten reduced beer.  Watch for our GRIPA Beer soon (Gluten Reduced IPA).  “Grip A Beer” -- get it?
